Settings is reached from the Home tab and holds seven things, some of which only appear in certain states.

Signing out
Signing out returns you to the welcome screen. Your account is untouched, and signing back in with the same method restores your queue, stats and history.
One thing to check first: if you have never created an account, there is nothing to sign back in to. Progress on a device with no account is local to that device. See creating an account.
Deleting your account
Delete account at the bottom of Settings, then Remove account to confirm. The confirmation is explicit about the scope:
Are you sure you want to remove your account? This action will permanently delete your account and all associated data. This cannot be undone.
That includes your study queue, learned hands, category percentages and EV history. An active subscription is a separate matter, held by Apple or Google, and deleting the account does not cancel it. Cancel the subscription first, through your app store, if you do not want it to renew.
